Donkey’s milk is considered to be that most resembling breast milk, in both chemical composition and characteristics. QUATTRO LATTI (Four Milks cheese) is a matured cheese made from pasteurised cow, sheep, goat and donkey’s milk. The cheese is pale yellow in colour with small, iregular holes. The use of donkey’s milk lends this cheese a delicate, rounded flavour, which perfectly offsets the strong and tangy flavour of the sheep and goat’s milk.
