Ripened cheese produced with local sheep's milk. The cheese is compact, dry, with a straw-yellow colour tending towards ochre. Sheep's milk Testun can withstand long ripening periods, is perfect as a table cheese, but also in the kitchen to fill ravioli, or as a dressing for gnocchi and risotto dishes. Excellent when paired with a robust red wine.
