Testun al Barolo is produced using pasteurised goat and sheep’s milk and is an uncooked pressed cheese. For this reason it possesses a semi-hard consistency and a straw-yellow colouring with the crust a bright purple, owing to contact with Barolo wine and Nebbiolo lees. The intense flavour of the cheese is successfully enhanced by the fruity contrast with the wine, making it an ideal accompaniment for aperitifs.
INGREDIENTS: pasteurised goat and sheep’s milk, salt, rennet and lactic bacteria cultures. The crust preservative E235 is not comestible; the crust also contains E163 colouring.
