Cheese made with raw cow's milk. The irregular and square form has ancient origins, because in the past Sola was pressed between two wooden boards, commonly called "selle". It is a semi-soft ripened cheese, produced in the southern part of the province of Cuneo. The cheese has a straw-yellow colour, with a soft and unctuous texture, with sparse, light holes. Sola has a delicate, slightly sour flavour, and is ideal for all types of cooking.
