Method:
Cut the leek into thin pieces and sauté. Break up the lettuce into strips and place it in a pan. Cook for 2-3 minutes. Add the rice and cook, progressively adding the glass of wine. Add salt and pepper.
When nearly cooked, cut the goat's milk Sola into small cubes and leave it to melt in the rice.
When the rice is cooked, turn off the flame and add the butter. Leave to cook until creamy for a few minutes.
