A cheese made with pasteurized goat's milk, it is a semi-soft ripened cheese, produced in the southern part of the province of Cuneo. The cheese has a white colour, with a soft and unctuous texture, with sparse, light holes. The flavour varies significantly depending on the ripening period: it has sweet, milky notes if eaten fresh, whilst assuming more intense, stronger tones in its more ripened versions.
