Raschera is a DOP cheese produced using raw cow's milk. It can be made in two different versions: round or square. The rind is thin, smooth and soft, grey or reddish coloured, and sometimes presents yellow tones and reddish embellishments. The cheese is elastic, white or ivory coloured, with sparse, evenly distributed small holes. The flavour of Raschera varies significantly depending on the ripening period: fresh Raschera has a sweet and delicate flavour, whilst the more ripened version has a stronger, moderately spicy flavour. Excellent when paired with seasonal vegetables.
