Gorgonzola dop

Gorgonzola is a cow's milk DOP cheese, with short and medium ripening depending on whether it is Sweet or Spicy. In the Sweet version, the cheese is creamy, white or ivory coloured with classic green-blue stripes, whilst in the Spicy version, the cheese is friable, sometimes chalky, ivory coloured with dense blue-green stripes. Ideal as an ingredient in filled pasta, excellent when eaten on its own during a meal.

 

INGREDIENTS: milk, salt, rennet, lactic cultures.

TYPE OF MILK: cow's milk.

MILK TREATMENT: pasteurized.

RIPENING: sweet 60 days/spicy 80 days.

AVAILABILITY: all year.
