Furmag del Castel is made with pasteurized cow's milk. It is a sour, very friable cheese, with a flavour that varies significantly depending on the level of ripening: sweet and slightly sour in the fresh version, pleasantly flavoursome and tasty in the more ripened version. Excellent if paired with honey and great for adding flavour to raw meat.
