Furmag del Castel Erborinato is a sour, blue cheese, made with pasteurized cow's milk. It is very friable to the touch, with blue stripes thanks to its natural blue vein process. The tasty blue vein flavour makes the cheese perfect for use as a dressing on first courses, or as a filling in fresh pasta.
