Furmag del Castel ‘Cit’ cheese is made using pasteurised cow’s milk. This is an acidic cheese with a crumbly consistency. The flavour varies according to the stage of maturation of the cheese: sweetish and slightly acidic when fresh, becoming tangy and flavoursome when mature. Excellent if served with honey and perfect for crumbling onto a raw beef antipasto.

MATURATION: a minimum of 50 days.
