Fiore Sardo dop

DOP cheese with raw sheep's milk. Fatty cheese, with medium to long ripening, with a hard and friable texture. One of its peculiarities is that during the first stage of ripening, it is also slightly smoked. The rind is hard, smooth or rough and unctuous, due to the natural protective films. The colour varies from straw-yellow to a dark, almost black brown, depending on the level of smoking. The cheese is hard, leaning towards friable, white or straw-yellow depending on the degree of ripening, with evenly distributed small holes. It is recommended as a second course or at the end of a meal.

 

INGREDIENTS: sheep's milk, salt, rennet, lactic cultures.

TYPE OF MILK: sheep's milk.

MILK TREATMENT: raw.

RIPENING: minimum 105 days.

AVAILABILITY: from October to May.
