Cheese made exclusively from the milk of Piedmont cattle, commonly defined as white "bianche piemontesi". Dibianca Piemunteisa allows the rediscovery of cheeses of the past, when only the milk of this native breed was used. Today, this breed has been replaced by the Frisona, given that it is more productive. This means that sourcing the raw material for the production of this particular cheese is becoming increasingly difficult.  Dibianca cheese has a straw-yellow colour, with ochre tones in its more ripened versions and sparse, uneven holes. It has a strong and intense taste, for all those seeking to rediscover the typical local scents and flavours of times gone by.

 

INGREDIENTS: Piedmont cattle cow's milk, salt, rennet, lactic cultures.

TYPE OF MILK: cow's milk.

MILK TREATMENT: raw.

RIPENING: minimum 30 days.

AVAILABILITY: all year.
