Asiago is a cow's milk cheese that can be produced using either raw or pasteurized milk. The cheese is white or light straw coloured, unctuous, with dense, medium-sized holes, evenly distributed. It is a very pleasant table cheese, appreciated for its sweetness and its variety of uses in the kitchen. Recommended with dandelion honey, a wild rose berry jam, strawberry mostarda.
