Stravej biologico

Stravej is made with semi-skimmed raw milk, from the province of Cuneo. The pride and joy of our production, Stravej has received many awards and prizes thanks to its extraordinary bouquet of flavours and scents, developed during more than two years of ripening. Treated weekly with seed oil, the rind presents intense colours, similar to caramelised sugar. The powerful aromas of dried fruit and wood captivatingly combine with a friable and soluble structure. It presents numerous tyrosine crystals, proof of its long ripening period. A tasting cheese, excellent on raw meat, delicious if grated or in flakes on risottos, to enhance flavour. Ideally paired with robust Piedmont wines such as Dolcetto and Nebbiolo.

 

 

INGREDIENTS: organically farmed milk, salt, rennet, lactic cultures.

TYPE OF MILK: semi-skimmed cow's milk.

MILK TREATMENT: raw.

RIPENING: minimum 720 days.

AVAILABILITY: all year.
