Parbleau is a blue cheese, produced using local goat's milk. It is very friable to the touch, with blue stripes thanks to its blue veining. Thanks to the long ripening process in our cellars, the strong goat's milk flavour mixes with the flavour generated by the mould, developed inside the cheese. At the end of the ripening period, the Parbleau acquires a strong and intense flavour, perfect to be eaten at the end of a meal, whilst very versatile in the kitchen.
INGREDIENTS: goat's milk, salt, rennet, lactic cultures.
TYPE OF MILK: goat's milk.
MILK TREATMENT: pasteurized.
RIPENING: minimum 60 days.
AVAILABILITY: all year.
