Gorgonzola is a cow's milk DOP cheese, with short and medium ripening depending on whether it is Sweet or Spicy. In the Sweet type, the cheese is creamy, white or ivory coloured with classic green-blue stripes. Ideal as an ingredient in filled pasta, excellent when eaten on its own during a meal.

RIPENING: sweet 60 days/spicy 80 days.
