German cheese made with pasteurized raw milk, well-known in Italy thanks to its unique and unmistakeable flavour. It has a mouldy external rind, while the actual cheese is soft, white, with consistent blue veining. Tends to cream with ripening.

INGREDIENTS: milk, cream, salt, rennet, lactic cultures.

TYPE OF MILK: cow's milk.

MILK TREATMENT: pasteurized.

RIPENING: minimum.

AVAILABILITY: all year.
